My Philosophy:
Working with fantasy and enthusiasm, I try to combine in a creative way modern cooking with mediterranean tradition (therefore taste, simplicity and freshness). My research is the fruit of past experiences in different European and non-European towns and it goes on day after day in the kitchen by balancing tastes and fragrance in a harmonious way with the territory. Our first goal is the respect for the primary products, quality, origin and exaltation of the product.. Correct balance and sobriety in the food combinations make our suggestions within the reach of the most refined gourmand. ... craziness is also a good ingredient that permits us to go on doing this fantastic work with fun and originality. I would like to thank the Maffei Family for allowing me this dream and my colleagues for helping me making it come true.
